About Nicola
Nicola's Pasta Fresca creates fresh pasta reminiscent of those made in Italy. Each Sunday as a young boy Nicola would make fresh pasta, homemade breads and pizza from scratch with his grandmother. She taught him traditional Italian cooking methods as were passed down to her before. His love of cooking continued to grow from there. He attended the Italian Culinary Academy in Parma Italy, where he received a Grand Diploma Degree. ​While in Italy Chef Nicola worked side by side with the finest Italian Chefs. There he learned different techniques of making fresh pasta.He has brought those traditions and what he has learned to create Nicola's Pasta Fresca.
Chef Nicola hand selects each ingredient he puts in his pasta. To ensure the freshest quality he buys eggs, dairy, and produce directly from local farmers. All pastas are made from scratch and then hand rolled. He creates many different fillings, which include his signature ricotta. The results can only be described as "Delizioso".
